WEST ALLIS - Caterina's Ristorante in West Allis has been serving up Italian fare for decades, so it must be doing something right.

When the health inspector showed up last week, he found a number of things wrong.

Those included four critical health violations -- hand wash stations were not stocked with paper towels, toxic cleaning supplies were storied over food, and prepared food was sitting around without an expiration date.

The fourth violation is a rare one: the restaurant did not have records of where its mussels and clams came from. That's important in case someone gets sick from the shellfish.

Restaurant owner Tony Ingrilli said that has been fixed.

"As far as the tags for the mussels and the clams, I didn't know I was supposed to save them, but now we do," he said.

Ingrilli said the inspector arrived after a busy lunch service last Wednesday and the restaurant did not look its best, but it's all better now.

The health department should be back within the next three weeks to make sure Caterina's is keeping it clean.
