Dirty Dining: Tanino's

MILWAUKEE - Problems in the kitchen for a pizza joint on the city's far southwest side. Here's what the owner had to say about his restaurant's cross contamination issues.

Tanino's on 76th and Morgan. This place whips up 200 pizzas a night. But there are some problems in the kitchen.

Employees were slicing up tomatoes and lettuce with their bare hands. Those veggies were for customer's sandwiches. Owner Frank Laffralchini told me "we put the gloves on once we open for the business at four o'clock." He also said he's corrected the problem.

A damaged cooler running too warm. The door doesn't shut all the way. "The sealer was busted. It's all fixed up," commented Laffralchini.

And the ice machine. The inspector noted "much mold build up inside the ice machine."

Tanino's had to do some detailed cleaning of kitchen surfaces. Shelves were sticky. "They're all taken down and washed. They were scrubbed down," Laffralchini told us as he showed us the shelves.

Inspectors also found no hot water at the restaurant's bar sinks. They also ordered employees to stop drying their hands on aprons. It can recontaminate them.

Before we left Laffralchini told us, "I've been doing this since I was 21 years old, and this is the first time this happened." That's not exactly true. Tanino's also had problems on its last two health inspections.

The owner tells me everything has been cleaned up, this time around.
