Café Manna shares their recipe for a Veg-tacular Harvest Platter!
That's raw marinated Portobello mushrooms fanned around a terrine of sunshine tomatoes, zucchini and yellow squash with a Greek quinoa salad in a crisp lavish tower, shitake “confit” and a duo bell pepper coulis.
Recipe: Greek Quinoa Salad
4 cups cooked Quinoa
4 oz Diced Feta Cheese
¼ cup Minced Red Onion
¼ cup Diced Kalamata Olives
¼ cup Capers Rinsed
3 Tablespoons Red wine Vinegar
½ tablespoon fresh Oregano
Mix all ingredients in large bowl and then chill.
