Caramelized Onion and Roasted Garlic Soup
(Makes 4 large bowls)

Ingredients
1- Whole Yellow Onion (Julienned)
10-15 Whole Garlic Cloves
1/8# (1/2 Stick) Salted Butter
1/4 Cup Brown Sugar
3 Cups Heavy Cream
2 Cups Milk
1/2 TB Sea Salt
 
Directions
In medium saute pan melt butter, add garlic cloves and caramelize, put pan in 350 deg. oven for approximately 15 min to roast. Remove from oven and add julienned onions. Saute until caramelized, then add brown sugar, continue to cook until the sugar reaches a smooth silky consistency and completely incorporates with the butter. Remove from heat and cool slightly. Place contents of pan in a blender and add 2 cups milk slowly as you puree, ensuring the mixture emulsifies (liquid appears consistent in color and texture(no excess butter)

In medium sauce pan combine blender contents and 3 cups heavy cream. Reduce until golden in color and desired consistency (appx:20 min). Top with balsamic glaze prior to serving.

Buttermilk Pancakes
(Makes 6-8 6" Pancakes)
 
Dry Ingredients
2 Cups - All Purpose Flour
1 TB - Baking Powder ( Double Acting)
1/4 Cup - Granulated Sugar
1/4 Tsp - Ground Cinnamon
1/4 Tsp. Sea Salt
 
Wet Ingredients
3/4 Cup - Warm Water
1 - Egg (Beaten)
1 Cup - Buttermilk
1 TB - Vanilla Extract
1/8 #(1/2 Stick) - Salted Butter (Melted)

Directions
Mix all dry ingredients thoroughly. Mix wet ingredients separately and add to already mixed dry ingredients. Finish with melted butter. Leave rest approximately 5 minutes prior to cooking. Add your favorite fruit to the cakes during the cooking process for an extra flavor.
