Mr. B’s Steakhouse 17700 West Capitol Drive Brookfield, WI 53045 (262) 790-7005 http://www.mrbssteakhouse.com/docs/home.html Colossal Crab Salad 1 # Colossal Crab meat 1 Avocado (diced) 4 Tomatoes (2 sliced and 2 diced) To Taste Salt and Pepper 2 Heads Frisee 4 Slices Pancetta, Prosciutto, or Bacon (crispy) Combine diced tomatoes, avocado, crab in a medium bowl. Season with salt and pepper. Dress with just enough to coat. Place frisee in a separate small bowl. Season with salt and pepper. Lightly dress greens. Arrange sliced tomatoes on salad plates. Set greens on top of tomatoes. Spoon crab mixture on top of greens. Garnish with crispy prosciutto. Dressing 1 ½ cup Mayo 1 teaspoon Dry Mustard To Taste Salt and Pepper Juice of 1 Lemon Juice of ½ Lime and Orange Whisk all together Steak Diane 4 (3-4 oz) filet mignon medallions Salt to taste Pepper to taste 1 t butter 4 t shallots-minced 1 t garlic-minced 1 c sliced mushrooms ¼ c brandy or cognac 2 t dijon mustard ¼ c heavy cream ¼ c reduced veal stock 2 t Worcestershire sauce Season both sides of filet medallions Add butter to sauté pan (large) bring to med-high heat Add filets to pan and sear first side (approx. 1 minute) Turn steaks over-sear second side Add garlic and shallots to side of pan. Saute Add mushrooms and lightly saute Remove meat-(finish in oven if needed) Deglaze pan with brandy-carefully! Add mustard, veal stock-reduce Add cream and Worcestershire sauce-reduce Adjust seasonings Serve over steaks Chocolate Chip Pecan Tart 1 cup Corn Syrup ½ cup Sugar ¼ cup Butter (melted) 1 teaspoon Vanilla 3 Eggs (beaten) ½ cup Chocolate Chips 2 cups Pecan Halves I Pie Crust in a 9 inch Tart Pan Sprinkle chocolate chips into pie crust. Combine corn syrup, sugar, melted butter, vanilla, beaten eggs. Fold in pecan halves. Pour filling mix over chocolate chips in tart pan. Bake at 350 degrees approx. 25 minutes. Cook times will vary. Bake until center of tart is firm.
