Motor Restaurant (at the Harley-Davidson Museum) 401 West Canal Street Milwaukee, WI 1-877-436-8738 http://www.h-dmuseum.com/eat/ Reuben “Potato, Potato, Potato” Pancakes Potato Pancakes, 3 each (recipe below) Russian Dressing, 3 TBSP (recipe below) Sauerkraut, 3 oz Corned Beef – sliced, 4.5 oz Swiss Cheese – sliced, 2.25 oz Chef Notes: Deep fry pancakes, pat dry. Spread dressing on each pancake. Squeeze excess water from sauerkraut and place evenly on top of pancakes. Top with hot sliced corned beef and top with cheese. Place under broiler to melt cheese. Serve, and hear the engine roar! Potato Pancakes Ingredients: Russet potatoes peeled, 5 lbs Matzo Meal, 1 cup Raw Spanish onion – diced, 1 lb Flour, 1/2 cup Whole raw eggs, 2 Salt & Pepper to taste Chef Notes: Grind first three ingredients in a meat grinder and place in bowl. Fold in remaining three ingredients. Grab a pan coated with vegetable oil and scoop medallion-sized dollops of batter into the pan. Heat until golden brown on both sides. Russian Dressing Ingredients: Mayonnaise, 3 cups Ketchup, 1 cup Red Wine Vinegar, 1 TBSP Kosher Salt, 2 TSP Fresh Cracked Black Pepper, 1 TSP Fresh Lemon Juice, 1/8 cup Sugar - granulated, 1/8 cup Onions -grated, ½ each Chef Notes: Combine sugar, salt, pepper, red wine vinegar and lemon juice in a large mixing bowl. Whisk to dissolve. Add remaining ingredients and whisk smooth. Place to side until final assembly.
