Donut peach beignets with blueberry smash & beaujolais syrup
Ingredients:
2 cup flour
2 tbsp sugar
2 tsp baking powder
½ tsp salt
2 tbsp powdered milk
1 tsp cinnamon
2 ea eggs
½ cup water
2 cup diced donut peaches (roasted)
2 tbsp corn oil
2 tbsp powered sugar
Sub-recipe
1 cup blackberries
1 cup blueberries
1/3 cup sugar
3 tbsp Grand Mariner
Sub-recipe
1 cup Beaujolais Nouveau
½ cup white balsamic
2 tbsp brown sugar
¼ vanilla bean
Method:
Combine all dry ingredients then incorporate wet ingredients in a mixer to blend. Do not overwhip. Let rest for at least an hour chilled and deep fry until golden brown (about 4 minutes). Sprinkle with powdered sugar. For the blueberry smash, combine blackberries & blueberries with sugar in saute pan and heat on medium heat until sugar caramelizes. Drizzle in your Grand Marinier and set aside to cool. For the Beaujolais syrup, combine above ingredients and reduce by 2/3. Set aside to cool. Enjoy!
