Sesame Tofu With Sun-Dried Tomato Asparagus Risotto

1 Cup pre cooked Arborio Rice
¼ Cup Diced Asparagus
¼ Cup Chopped Sundried Tomatoes
1/3 Cup Heavy Whipping Cream
1 Tsp Minced Garlic
2 Tbl Shredded Parmesan
Tsp Olive Oil
Salt and Pepper to taste

In a sauté pan, sauté garlic, asparagus and tomatoes in olive oil until tender. Add Arborio Rice and cream and simmer until almost all cream is absorbed (about 2 min). Fold in parmesan and season to taste.

Mango Lime Vinagrette

2 Cups fresh Mango Diced
1 ½ Cup Olive Oil
¾ Cup Maple Syrup
½ Cup Lime Juice
2 Tbl Champagne Vinegar or White Wine Vinegar
1 ½ Tsp Celtic Salt
1 ½ Tsp Fresh Minced Ginger

Place all ingredients minus the oil in blender and puree until smooth. With blender still running slowly add olive oil until thick. You may thin vinaigrette consistency with water if desired.

Coconut Curry Sauce

1 ½ Cups Coconut Milk
1 Cup Chopped Cilantro
½ Cup Water
¼ Cup Safflower Oil
¼ Cup Tamari Sauce
¼ Cup Maple Syrup
1 Clove Garlic
2 Tbl Curry Powder
2 Tsp Grated Ginger

Place all Ingredients minus cilantro in blender and puree till smooth. Mix in chopped cilantro.
