Lobster Mac & Cheese
1 ½ Tbsp. Unsalted Butter
¼ Cup Yellow Onion
1 Tbsp. Flour
1 Cup Lobster Stock
1 Cup Whipping Cream
1 Tbsp. Dry Sherry
Salt & Pepper to Taste
1 ¼ lb Elbow Macaroni (cooked al dente)
8 oz Cheese (combination of cheddar, fontina and gruyere)
1 lb Lobster Meat
8 Tbsp. Bread Crumbs
Procedure:
1. Melt the butter in a sauce pan over medium heat. Add the onions and sauté until soft. Add the flour stirring to distribute and cook for 1-2 minutes. Whisk in the remaining ingredients until blended. Reduce the heat to low and simmer for 8-10 minutes or until sauce just begins to thicken.
2. Add the lobster meat and continue to cook 3-4 minutes until lobster is just cooked through. Add the pasta and stir to combine. Add the cheese and stir until melted and sauce thickens and coats the noodles.
3. Remove from pan and place in a baking dish. Top with bread crumbs and place under the broiler to lightly toast the bread crumbs. Top with fresh cut chives and serve.
Ahi Tostada
¼ lb Ahi Tuna Loin (diced ¼”)
6 each Fried Won Tons
½ cup Shredded Cabbage (red cabbage & napa cabbage mixed tossed with 1 Tbsp. seasoned rice wine vinegar)
1 small bunch Daikon Sprouts (root end trimmed off)
1 each Avocado (diced ¼” and lightly mashed)
½ tsp. Black Sesame Seeds
2 tsp. Sriracha Chili Sauce
1 tsp. Mayonnaise
Wasabi Sauce
1.5 tsp. Wasabi Powder
As needed Water
2 ½ tsp. Mayonnaise
¼ tsp. Lemon Juice
For The Wasabi Sauce:
1. Place wasabi powder in a bowl and slowly whisk in water until it forms a loose paste. Whisk in the mayonnaise and lemon juice until smooth.
For The Tuna:
1. Combine sriracha, mayonnaise and tuna in a small bowl and mix thoroughly.
To Plate:
1. Place the won tons on a plate and evenly spread avocado over each one. On top of the avocado place equal amounts of shredded cabbage and then top each with daikon sprouts.
2. Evenly distribute the tuna mixture between each won ton and top with sesame seeds. Drizzle wasabi mayonnaise over each won ton and serve.
