Fishschetta
2 cups Chopped tomatoes
1/2 cup Chopped onion
1/4 cup Rough chopped basil
Tbls Minced garlic
1/4 cup Chopped black olives
1/4 cup Chopped green olives
Tsp Balsamic vinegar
3 tbls Olive oil
2-8oz will serve 2
Salt & pepper to taste

Fry 3-4 tilapia filets in a pan with a little butter or olive oil. Cover filets with bruschetta mix and cook until fish is flaky - serve.
 


Panang Shrimp

Panang Sauce
4 oz. Red Thai curry paste (Panang)
1/2 cup peanut butter
1/4 cup chopped basil
3 cans Coconut milk (13 oz)
1/4 cup sugar
6 jalapenos cut into slices
4 Kafir leaves (Thai lime leaves)
16-20 large shrimp (peeled and deveined)
8 shrimp per serving

Simmer & let cool. Start shrimp in a fry pan. Flip. Add sauce, bring to a boil and finish. Serve over rice.
 


Prince Edward Island Mussles

In a large fry pan:
1 cup water
1/4 tsp lemon juice
1/4 cup white wine
1/4 cup chopped tomatoes
1/2 tsp fine chopped garlic

Bring to a boil. Drop in mussels & cover when mussels open. Serve.
