Dirty Dining: Vientiane Noodle Shop

MILWAUKEE - Employees touching customer's food and other cross contamination risks…that’s what inspectors found at a noodle shop on Milwaukee's near south side.
At Vientiane Noodle Shop on 35th and National, inspectors found an employee handling lettuce with bare hands. This is a repeat violation. Last year, health inspectors found the same problem. According to the owner, that employee was washing the lettuce.
Inspectors also found a rice scoop, covered in rice, sitting out at room temperature. Inspectors ordered it stored in the heated rice or in hot water solution.
They also found open bags of rice, sitting on the floor. Clean pots were also found stored on the kitchen floor. Six to eight inches above the floor is what's required.
Uncovered bowls were being used for sauces on customer's tables. Inspectors ordered the food protected from cross contamination.
Last year, inspectors found mouse droppings. This year’s inspection turned up flies and fly paper in the kitchen.
The owner said the restaurant is quick to comply and everything's been cleaned up, and also added it's a clean place.
