Cheng Wong serves up continual violations

MILWAUKEE - Health inspectors keep running into the same problems at Cheng Wong.  The latest inspection did not disappoint.
 
Cheng Wong, on Miller Park Way near Mitchell, has continual problems with food temps - a critical violation and something that could make customers sick.
 
The inspector found two tubs of fried chicken, and a plastic container of egg rolls, sitting out at room temperature.  
 
She told me "this exact violation with the exact same foods has been noted on previous inspection reports."
 
Owner Ren Zhang tells us he's not worried about his restaurant's food safety.  ""The food temperature is fine."  
 
When asked why Cheng Wong continues to make so some of the same mistakes, Zhang said, "all I can tell you is I wasn't here that day."
 
Another problem that keeps coming up, employees use the hand wash sink as a work surface.
 
The inspector noted, "observed no hand washing during the inspection."
 
Also, "the only hand wash sink was covered, inaccessible, and the water was turned off."  Zhang pointed out employees wash their hands at the other sinks in the kitchen, "they're washing here, we have soap back here."
 
Employees were storing food in Roundy's plastic bags, not approved because of the cross contamination risk.  
 
Also cutting boards were in bad shape which can harbor bacteria.  They were replaced.  
 
Soiled shelving was covered by cardboard.  
 
Cheng Wong was ordered to throw out the cardboard and clean those shelves.
 
Zhang says it's all corrected and he's not worried about Friday's re-inspection.
