Rodent problem discovered at Water Street Brewery

MILWAUKEE- A popular spot to grab a bite and a brew, ordered to clean things up by the health department including a rodent problem.
The Water Street Brewery downtown Milwaukee has been in business 25 years, but health inspectors found fruit flies in the kitchen and bar area. In the basement, dead roaches and evidence of rats.
No one there could talk on camera, but Director of Operations, Matt Schmidt, did follow up by phone to comment on the violations. like food temperature problems.
Filling for chicken quesadillas was not cooled properly. Chicken breasts and cheese sauce not kept hot enough, and items in a cooler were too warm at 50 degrees. The safe cold temp is 41. Schmidt says that cooler will be replaced and staff will do a better job monitoring food temps throughout the day.
There was another cooler dripping condensation onto food. Schmidt tells us it will be fixed. According to Schmidt it's the worst inspection he's seen for this restaurant but claims it's not an example of what they do every day.
As far as the pest problem in the basement Schmidt claims a company comes every week, but in a 100 year old building it's a constant battle. He says they are looking for new ways to solve the problem.
