'Tokyo' facing several heath violations

ELM GROVE- A sushi and hibachi place in Waukesha County with some violations in the kitchen.
"Tokyo" on 129th and Bluemound in the Autumn Grove Plaza. This spot had some cross contamination risks like a cook handling raw shrimp and not changing gloves before doing other tasks. Also, raw meat stored over carrots in a cooler.
Manager Vicky Cheng tells TODAY'S TMJ4 things are now clean and adds employees do know right from wrong. When asked why Tokyo didn't have a clean health inspection she said,
"..we were like so some employee are new, so that's why we didn't do it properly."
Things like fish in a sushi display case at 48 degrees. The safe cold temp is 41. And bulk bags of food sitting uncovered also onions sitting on the floor under a dish machine.
Employees did fix some of the violations during the inspection. Cheng didn't want to show us the kitchen but again said most violations have been corrected. A follow up inspection does support what the manager told us.
