Bartolotta Sponsors Cooking Contest on Daybreak
I didn't want a contest. It was Susan Kim who tells me Joe brought two blow torches, and we can race.
A regular guest on Live at Daybreak, Super Restaurateur Joe Bartolotta appeared on the program this morning. He was showing us how to make creme brulee. The final step is to caramelize the sugar to make the top nice and crispy.
So Susan and I go to work, with blow torches. the key is to get the whole thing bubbling at once. You've got to really work the torch around the edges. You don't want one part to get done quicker than the other, and you're shooting for a nice golden brown, not black.
I liken it to quality marshmallow roasting. Sure, you can get the job done by lighting the thing on fire, but what you really want is a soft warm up and golden edges.
Anyway, as you can see from the video, (click on the link provided here) Susan was done with hers faster. Bartolotta, however, liked the Vitrano brulee better. He even told me after, "Yours is restaurant quality."
A reluctant participant in this contest was I, but don't throw me the fastball unless you plan to watch it sail over the left field wall.
